It’s Been a While…

Y’all. This is hard. I certainly haven’t been feeling very “superlative” these days! How do you blog about living your best life when you are self-isolating during a global pandemic? It’s kind of difficult to write about traveling when your only view of the world is from your front porch. So then I start thinking that superlatives are not limited to “best” or “most fabulous” but include “worst and “most terrible”…. Well, I certainly don’t want to go down that rabbit hole — who wants reminders right now of how hard things are?

So I’ve decided to keep writing. Keep focusing on the positive. (For instance, my view of the East End of Galveston is pretty spectacular!) One of my favorite things in life is to plan travel for myself and others. Of course, none of us may be traveling any time soon, but I can still do my research and make recommendations, so let me know if you need help planning! And there are so many incredible places that I haven’t shared with you all on the blog. Stay tuned for that.

Then there’s the cooking. Like many of you, I have been doing lots of that! This past weekend Scott smoked a couple of chickens, and I made Crisp Gnocchi with Brussels Sprouts and Brown Butter. It was sooo good! We’ve been trying some new things — Pan-Roasted Eggplant with Peanut-Chile Sauce was a hit with a family that didn’t think they liked eggplant. I’ve also used the crockpot quite a bit — Pulled Pork BBQ, Mississippi Roast, and Salsa Verde Chicken. I will share recipes and tips for those and more in the coming days.

Hang in there friends. Go for walks and golf cart rides. Keep up the social distancing. Be good to your family. Eat well. Be creative. Help others. I am confident that we can all find ways to make the MOST of this time at home.

    Okay — full disclosure. Before Corona rocked our world, I had already fallen behind on writing the blog. Life sometimes gets in the way, but I plan to get back into the habit of posting here! I hope you will come back to read more.
